Recommendations for use

Thanks to its distinctive taste, Forest Honeydew is ideal with sweet and fresh cheeses. It is a good addition to dishes that require long cooking and is equally delicious in the dessert variant, together with fresh ricotta and dried fruit.

The insect

Honeydew production occurs due to attack by insects of the order hempitera, generally from July to September. Honeydew is a sugary substance secreted by some small insects (aphids, cochineses, psylls, etc.) that feed on the sap of trees, in particular spruce, pine, oak, linden and maple. These insects have to consume huge quantities of sap to acquire all the elements necessary for proper nutrition, and, at the same time, they eliminate excess water and sugars. Honeydew, which is actually a waste product of these insects, is very rich in substances such as mineral salts and sugars, and is a useful source of nutrition for bees.
