Linden Honey has a fresh, sweet and aromatic flavour reminiscent of mountain herbs and mint. It retains a certain intensity and persistence, with aromatic notes that can be described as camphorous or resinous.

After extraction by mechanical centrifugation, the honey is left to decant cold, then filtered and packaged. The processing temperature is always close to 30°C in order to preserve the flavour, aroma and nutrients.

Recommendations for use

It goes perfectly with herbal teas, giving beverages a sweet aroma. It is also a versatile ingredient in a variety of culinary specialities. It goes well with fish dishes and can be used to sweeten tea and infusions. It is particularly appreciated for its ability to sweeten and flavour milk. In addition, thanks to its natural freshness, we recommend pairing it with mountain cheeses.

The animal

The Lemur of Madagascar is an endemic animal, that is, it is not found anywhere else, and is part of Africa’s exceptional biodiversity heritage.

Poverty drives the inhabitants of Madagascar to practice deforestation and poaching, thus putting the survival of the Lemur at risk. There are about 100 species currently living (a third of them are already in “critical danger”).

The plant

The Linden belongs to the Tiliaceae family and can be found both in its “wild” version (Tilia Cordata) and as an ornamental tree (Tilia Platyphyllos and Tilia americana), which is commonly found in parks, gardens, avenues and hilly terrain. They are trees (up to 20 m in height) with very fragrant yellowish-white flowers that bloom from May to July. It has a long lifespan, lasting on average over 250 years, but there are many even older specimens. It is commonly found in dry and humid forests, reaching altitudes of up to 1,500 metres.
