Sulla Honey is characterised by its less intense flavour and fragrance. Its taste is medium sweet, with a slight tendency to acidity and a delicate persistence.

After extraction by mechanical centrifugation, the honey is left to decant cold, then filtered and packaged. The processing temperature is always close to 30°C in order to preserve the flavour, aroma and nutrients.

Recommendations for use

Thanks to its balanced and non-invasive characteristics, it is widely used to make hard nougat and lends itself to any type of use. This honey has a lingering palate, making it the perfect pairing for fresh and ricotta cheeses. We recommend it with sweet and sour dishes, preferably warm or lukewarm, as well as with white meats and small game.

The plant

Hedysarium coronarium, belonging to the legume family, is a perennial herbaceous species with flowers in carmine-red racemes. It can grow up to 50 cm in height and is cultivated as fodder, but it also grows in a wild or natural form on uncultivated land. It prefers clayey soils, but also adapts to poor soils. It blooms from April to June at altitudes from sea level up to 1,200 metres. Sulla honey is typical of Italy and comes mainly from areas where the plant has been preserved.
