Sulla Honey is characterised by its less intense flavour and fragrance. Its taste is medium sweet, with a slight tendency to acidity and a delicate persistence.

After extraction by mechanical centrifugation, the honey is left to decant cold, then filtered and packaged. The processing temperature is always close to 30°C in order to preserve the taste, fragrance and main nutrients.

Recommendations for use

Grazie alle sue caratteristiche bilanciate e non invasive, il miele di Sulla è ampiamente utilizzato nella preparazione di torroni duri e si presta a qualsiasi tipo di utilizzo. Questo miele ha un palato persistente, rendendolo l’abbinamento perfetto per formaggi freschi e ricotte. Consigliamo di gustarlo con pietanze in agrodolce, preferibilmente calde o tiepide, così come con carni bianche e piccola cacciagione.

The plant

L’Hedysarium coronarium, appartenente alla famiglia delle leguminose, è una specie erbacea perenne con fiori in racemi di colore rosso carmino. Può crescere fino a 50 cm ed è coltivata come foraggera, ma cresce anche in forma reinselvatichita o spontanea su terreni incolti. Predilige terreni argillosi, ma si adatta anche a terreni poveri. Fiorisce nei mesi di aprile – giugno ad altitudini comprese tra 0 – 1200 metri s.l.m. Il miele di Sulla è una produzione tipicamente italiana e proviene soprattutto dalle zone in cui si è mantenuta la coltura.
