Honey can be stored for long periods while maintaining all its properties. Excessive heat, exposure to high moisture and direct light cause a major damage than time. During storage, in some cases, honey can be altered due to fermentation: the product has too much water. This happens if the honey is not sufficiently developed before being extracted from the hive. A temperature monitoring, which should not exceed 20 degrees, a protection from moisture, a storing far from direct light ensure to honey optimal preservation so that it can be considered still fresh a year after its production.
