Strawberry tree honey is distinguished by a strong and persistent flavour and aroma, with a strong bitter and astringent component. The nose is pungent, with hints of ivy and coffee grounds, burnt leather, green pepper, cocoa bean, rhubarb and gentian. The taste reveals sensations of chicory, wet tobacco leaf, green wood and bitter root.

After extraction by mechanical centrifugation, the honey is left to decant cold, then filtered and packaged. The processing temperature is always close to 30°C in order to preserve the taste, fragrance and main nutrients.

Recommendations for use

It can be paired with bitter vegetables by analogy (cardoons, artichokes) or with sweet and fatty cheeses by contrast. It is also the perfect honey for coffee: the two bitter flavours go well together without the honey invading the aroma of the beverage. It is also used as an ingredient for nougats.

The plant

Arbutus unedo (family Ericaceae) is an evergreen fruit-bearing shrub or small tree that can grow up to 10 metres in height. It has yellowish-white flower clusters that bloom in late autumn, in October and January. Widely found in scrubland areas with siliceous soils from sea level to an altitude of 800 metres.

Its very late flowering season limits the production of this unifloral honey to areas where harvesting by bees is also possible in autumn and winter. A honey that is difficult to produce due to climatic conditions.
